4 15-oz cans navy beans (drain and rinse 2 cans)Directions
1. SauteĢ onions in oil until tender. Remove from heat and mix in pimentos.
2. Blend cashews, water, and seasonings on high until creamy.
3. Add beans and cashew cream to sautéed mixture. Bring to a boil and reduce heat to medium for about 5 minutes.
Tips
Pinto beans can be used instead of navy beans.
