Citrusy Pecan Kale Salad


The one kale salad you won't believe you can't get enough of.


8 cups kale chopped and packed
1 1/2 cups mango chopped
1/2 cup pineapple fresh, chopped
1 cup pineapple fresh, crushed
1 tablespoon dried unsweetened coconut flakes
1/4 cup pecans chopped
1/4 cup lime juice
1/2 cup canned coconut milk light
1/4 teaspoon salt


Chop your kale and place in a large salad bowl.
Dice up mango and pineapple and add it to the kale.

In a separate bowl mix together the coconut milk, 1 cup crushed pineapple, lime juice and salt.

Add the salad dressing mixture to the salad and use your hands to rub it in as much as possible. Add chopped pecans and shredded coconut, then mix well.

Serve chilled.
Salad will keep in refrigerator for up to 3 days.
