Mushroom Stroganoff

Make it a Full Plate Meal: Serve your stroganoff over a brown or wild rice mix with a side of sautéed veggies. Sliced pears would make a good dessert.

75% water-fiber foods – mushrooms, onion, garlic, parsley, brown or wild rice, squash, zucchini, bell peppers, pear
25% foods – olive oil, dark spirits, cashews

Recipe Note: Use only 1 tablespoon of olive oil to keep 25% foods in their zone.

Lentil Shepherd's Pie

Make it a Full Plate Meal: Serve with a winter fruit salad like this one for a complete meal.

75%water-fiber foods – potatoes, lentils, mushrooms, onion, carrots, garlic, tomato paste, fresh herbs, corn, peas, kiwi, clementine, banana, pears, apples, mint
25% foods – milk, vegan butter, wine, chickpea flour

Recipe Note: Use only 1 tablespoon of butter to reduce the amount of fat in the recipe. We’re fans of a healthier option called Earth Balance Buttery Spread.

Chili Mac and Cheese

Make it a Full Plate Meal: Serve it with a salad and a side of veggies for a delicious, flavorful meal.

75% water-fiber foods – garlic, onion, black beans, bell peppers, broccoli, cauliflower
25% foods – whole wheat pasta

Quinoa Vegetable Stew

Make it a Full Plate Meal: Serve it as a light supper or lunch the next day with a helping of salad. Cut the olive oil in half and use the cheese topping as your 25%.

75% water-fiber foods –onion, bell pepper, garlic, potatoes, quinoa, corn, tomatoes, peas, avocado, cilantro, salad vegetables
25% foods – olive oil, queso fresco

Beef and Vegetable Stew

Make it a Full Plate Meal:Serve a bowl of soup with an orange for dessert. Double the veggies and replace half of the meat with 2 cans of kidney beans (be sure to rinse and drain them before adding) to create a tasty 75/25 meal.

25% foods – olive oil, beef
