Crockpot White Beans

These rosemary infused white beans are the perfect pairing to any Mediterranean dish.

Ingredients

1 pounds great northern beans dry
4 cups water
2 tablespoons rosemary fresh
1 cup onion chopped small
4 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt or to taste

Directions

Place beans on a cooking tray and pick out any that are blackened. Rinse beans, place in a pot with enough water to cover completely. Bring to boil, then remove from heat, drain and rinse beans. Add beans to crock pot and cover with 7 cups water. Cook on low for 8 hours overnight or on high for 4 hours. In the morning, saute one onion and minced garlic in olive oil until softened...about 8 minutes over medium high heat. Add the onion saute to the beans, season with salt and turn off crockpot.
