Cucumber Dill Salad

Try this refreshing salad with any meal.


1/4 cup Greek yogurt low fat or fat free
2 tablespoons dill fresh
2 tablespoons fresh parsley chopped
2 tablespoons lemon juice
2 teaspoons olive oil
1 1/2 teaspoons mint leaves chopped
2 teaspoons Dijon mustard
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cloves garlic
2 medium cucumbers sliced
1 small red onion sliced


In a blender add the yogurt, dill, parsley, lemon juice, olive oil, mint, Dijon mustard, sugar, garlic, salt and pepper. Mix until the mixture is creamy.

Place the cucumbers and onions in a large bowl, add the creamy mixture, and toss well.
