Add a bit of European cuisine to your kitchen with this easy baked polenta.
3 cups whole grain cornmeal coarsely ground
10.5 cups water
1/4 teaspoon salt
3 tablespoons Earth balance buttery spread whipped or low fat butter of choice
Preheat oven to 350 degrees.
In a bowl whisk together 3 cups coarse whole grain cornmeal, 10.5 cups water, and 3/4 teaspoons salt. Pour mixture into a large casserole dish and drop 3 - 1 tablespoon pieces of butter on top of the polenta mixture.
Place in oven and bake for 50 minutes, until polenta is completely set. Remove from oven and divide into 12 pieces.
Top off with stews or ratatouille.
