Easy Bean Medley

This filling bean salad is a Power Up side packed with flavor in every bite.

Ingredients

1 15oz can kidney beans drained and rinsed
1 15oz can pinto beans drained and rinsed
1 15oz can black eyed peas drained and rinsed
1 10oz package lima beans frozen
1 cup corn frozen
1 large red bell pepper diced
1/2 medium red onion diced
1/2 cup Italian salad dressing (fat-free)

Directions

Toss all ingredients together and serve. Depending on the dressing used, it might need some salt, so go ahead and season to taste.

This recipe tastes better the longer it sits. Keeps well in the refrigerator for up to 3 days.

Tips

Put your corn and lima beans in a colander and run under room temperature water to help thaw out faster. Let sit for a few minutes prior to adding them to the salad.
