Falafel

This Middle Eastern food is prefect stuffed in a pita with your favorite raw veggies.

Ingredients

1 15 ounce can garbanzo beans low sodium, rinsed and drained
1 small onion white, finely diced
3 cloves garlic minced
3 tablespoons fresh parsley chopped
1 tablespoon cilantro chopped
1 teaspoon lemon juice
1 teaspoon olive oil
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon red pepper flakes
2 tablespoons unbleached white flour
1 teaspoon Rumford's Baking Powder

Directions

Preheat the oven to 375 degrees.

Rinse and drain your beans and pat dry with a paper towel. Pulse the beans in your food processor to chop the beans. Make sure you do not over chop them.

Place the beans in a medium bowl. Add all other ingredients to the beans and mix well.

Form 10 patties out of the mixture and place on a sprayed baking sheet. Bake for 15 minutes on each side. They will become golden on each side.
