Black Bean and Veggie Foil Packets

Make it a Full Plate Meal: Serve your foil packs as tacos for a fun meal at the campsite. The tortillas would be the 25% part of the plate.

75% water-fiber foods – corn, red onion, red bell pepper, cilantro, jalapeño, green bell pepper, tomato, black beans, guacamole
25% foods – oil, corn tortillas

Cauliflower Curry Packets

Make it a Full Plate Meal:  Serve your packet with a dollop of yogurt sauce as your 25% zone choice. Watermelon would make a great after-dinner treat.

75%water-fiber foods – cauliflower, potatoes, onion, tomatoes, green peas, chickpeas, watermelon
25% foods – oil, yogurt

Garlic Potato Foil Packets

Make it a Full Plate Meal: Next time you camp, serve a potato packet with a breakfast egg and a fresh apple for a filling breakfast. If you don’t eat eggs, serve the potato packet with grilled tofu instead.

75% water-fiber foods – potatoes, onion, garlic, thyme, rosemary, apple
25% foods – oil, egg/tofu

Recipe Note: Use just one tablespoon of olive oil to keep this as a 75/25 Plate.

Salmon Veggie Packets

Make it a Full Plate Meal: For a delicious dinner, serve your salmon packet over a cup of cooked quinoa. Triple the amount of veggies to boost the 75% zone, and make sure the salmon remains one portion (the size of a checkbook). You can use canned cannellini beans instead if you don't eat fish.

75% water-fiber foods –onion, red bell pepper, yellow bell pepper, asparagus, cannellini beans
25% foods – salmon

Dessert: Apple Pie Packets

Make it a Full Plate Meal: Eat your apple pie packet for dessert next time you camp or grill in your backyard. Just use half the amounts of the 25% items, and remember it will take up part of the 25% zone at a meal.

75% water-fiber foods – apple
25% foods – butter, sugar, raisins, pecans

👉 Water-fiber foods are 75% zone foods – whole, unprocessed fruits, vegetables, beans, and cooked whole grains.
