Homemade Cornbread


Tasty and filling, this cornbread is the perfect side to any hearty soup.


3.5 cups whole grain cornmeal coarsely ground
2 2/3 cup whole wheat flour
1 tablespoon Rumford's Baking Powder
1/4 cup maple syrup
3 1/3 cup almond milk or other low fat milk
3 1/2 tablespoons cooking wine
2 teaspoons salt
6 tablespoons Earth Balance original whipped


Preheat oven at 400 degrees. In a large bowl mix together cornmeal, whole wheat flour, baking powder and salt. Fold until throughly mixed. Add Maple syrup, milk, cooking wine and coconut oil. Whisk all ingredients together to ensure there aren't any flour pockets. Spray a 9X13-inch casserole dish with cooking spray, then pour the cornmeal mixture into it. Place in the oven and bake for 35 minutes, or until an inserted toothpick comes out clean.
