Kale, Oat and Blueberry Smoothie
Here's a sweetly refreshing way to get in a serving of kale first thing in the morning. You won't even taste it!
Ingredients
- 1 large banana, peeled, chopped, frozen
- 1/2 cup wild blueberries, frozen
- 1/2 cup almond milk or low-fat milk of choice
- 2 tablespoons Greek yogurt, no fat
- 1 teaspoon honey
- 3 tablespoons old old-fashioned rolled oats
- 1 cup kale, chopped
Directions
The night before, peel and cut up a banana into 4 pieces, place them in a plastic bag, and put them in the freezer. Rip the leafy portion off the stem of 1 kale leaf, and chop. Add frozen banana, blueberries, milk, and yogurt to your blender and blend on high (or use the ice setting) until the mixture becomes smooth. Add oats, chopped kale, and honey. Blend until completely smooth. Pour into a glass and serve immediately.
Tips
If you want, you can freeze your smoothie in 3-oz paper cups with a popsicle stick in the middle. You'll have healthy popsicles whenever you crave ice cream.
