Rainbow Pasta Salad
This pasta dish is a wonderful addition to a cookout. It's loaded with veggies.
Ingredients
1 box whole wheat pasta elbows1 1/2 cups red bell pepper diced
1 cup carrots sliced
1 cup diced tomatoes
1 cup diced tomatoes
3/4 cup onion diced
1 cup cucumbers diced
1 cup broccoli small florets
1 can garbanzo beans low-sodium, rinsed and drained
4 cloves garlic minced
1/4 teaspoon salt
1 teaspoon onion powder
1 1/4 cups Newman's Own Light Balsamic Vinaigrette Dressing

Directions
Cook pasta according to package directions. While pasta is cooking, mix all ingredients together except the dressing. Once the pasta is done, add to veggies and mix in dressing.
Tips
If you prefer other raw veggies, add those to the mixture.
