Sweet Tater Tot Chili Casserole

Enjoy this slimming tater tot casserole with a side of sautéed zucchini squash for a tasty and filling dinner
 

Ingredients

  • 15oz can black beans rinsed and drained
  • 15-oz can pinto beans rinsed and drained
  • 1.5 cups corn frozen
  • ounces spinach fresh (about 1/2 a bag)
  • 16-oz jar salsa
  • cup shredded cheese low fat
  • 16-oz bag sweet potatoes tater tots, puffs, or crowns
  • medium avocado
  • lemon
  • lime

Directions

Wilt spinach in nonstick pan, about 1 minute. Combine spinach, corn, beans, and salsa in a bowl. Pour into bakeware. Top with optional cheese and potatoes. Bake at 425 for 30 minutes, or until tater tots start to brown.

Before serving, dice an avocado and sprinkle it with fresh lemon or lime juice. The avocado could also be mashed and divided among the plates.
