Tomato Cucumber Corn Salad

Corn, cucumber, tomato and avocado pair up in this delightfully refreshing salad.

Ingredients

1/2 medium avocado diced
1/2 medium red onion diced, small
3 cups tomatoes chopped
1 medium cucumbers diced
1 cup corn frozen
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic minced
1/4 teaspoon salt or to taste

Directions

Chop onions finely. Dice up cucumber. Run frozen corn under room temperature water to defrost. Chop up tomatoes.Dice up 1/2 of the avocado. In a small bowl mix up olive oil, lemon juice, salt, and 1 minced garlic clove. Add all ingredients to a salad bowl, toss and serve immediately.
