White Bean Chicken Chili

1/2 pound chicken breasts - equals a medium size chicken breast 5 cups water
1 pack White Chili Mix
2 cans great northern beans - low sodium, rinsed and drained
1 can Rotel tomatoes - if you don't like spicy just use a can of petite diced tomatoes


Boil the chicken in the 5 cups of water until done.While the chicken cooks, rinse and drain you beans. Remove the chicken when it's done to cool and shred. Keep the water/broth and skim off anything that may be on top or you can strain the water. In a large pot, combine the broth and all remaining ingredients. Heat on medium/high heat until heated all the way through or in a Crockpot on low for 4 hours.

Keeps well for leftovers or in the freezer for another meal later on.
