Full Plate Meal Idea – Put It Together!

To make a single plate, follow these instructions. For a larger batch to serve more people or provide leftovers, multiply the number of ingredients as needed. 

  1. Prepare Smoky Cumin and Paprika Chickpeas as directed.  
  2. Sauté the spinach with 1 tablespoon of water, salt to taste, then set aside.
  3. Dice potatoes, then place in a pan with 1 teaspoon oil and cook on medium-high, turning often until very lightly browned – this should take about 5 minutes. Salt to tate.
  4. Chop the cilantro and slice the tomatoes. 
  5. Prepare an egg, scrambled or sunny side up. 
  6. Assemble on a large breakfast plate: chickpeas, spinach, potatoes, tomatoes, and egg. Top with cilantro and enjoy.
