- ½ cup sauteed shredded purple cabbage (1 cup raw)
- ¼ cup cremini mushrooms, sauteed
- ¼ red bell pepper, sliced
- ¼ orange, segmented
- 1 tablespoon scallions (optional)
- 1 lime wedge (optional)

½ cup cooked whole grain pasta (ex. whole wheat spaghetti, brown rice ramen)
- 1 tablespoon store-bought Asian peanut sauce
Full Plate Meal Idea – Put It Together!
To make a single plate, follow these instructions. For a larger batch to serve more people or to provide leftovers, multiply the ingredient amounts as needed.
- Prepare Quick and Savory Edamame Stir-Fry as directed.
- Cook spaghetti according to package directions and set aside to cool.
- Sauté 1 cup shredded purple cabbage with 1 tablespoon of water for 2-5 minutes over medium heat until softened and set aside.
- Slice and sauté cremini mushrooms for 2 minutes in a dry pan over medium heat, then set aside.
- Cut orange slices and set aside. Use a mandarin orange if available, as it is easy to peel and segment.
- Assemble by swirling cooled noodles on the plate, and arrange portions of edamame, purple cabbage, mushrooms, bell pepper, and oranges around the noodles. Sprinkle on scallions and add a lime wedge on the side. Serve with store-bought Asian peanut sauce.
