Recipe: Zucchini Patties

These zucchini patties are easy to make, low-calorie, and a nice Power Up with 4g of fiber in 2 patties. Top it with our Classic Tzatziki sauce recipe.

Ingredients

2 2/3 cup zucchini squash, shredded with skin
2/3 cup red potatoes, shredded with skin
1/4 teaspoon salt
1 teaspoon unbleached white flour
1 large egg white
1 tablespoon lemon zest
2 teaspoons fresh dill, chopped
2 teaspoons fresh chives, chopped
2 teaspoons of fresh mint leaves, chopped
2 teaspoons fresh parsley, chopped
1/3 cup onion, diced

Directions

Preheat the oven to 200 degrees. Toss the salt in with the shredded zucchini and potatoes. Let it sit for 10 minutes. Place the shredded zucchini and potatoes in the middle of a paper towel and squeeze out any liquid. Repeat with a new paper towel if needed. Spread the veggies out and sprinkle flour over them. Whisk together the egg, dill, chives, mint, parsley, and lemon zest. Add the onion and shredded veggies to the whisked mixture, stirring well. Divide into 6 equal portions.

In a large skillet over medium-high heat, place the portions in the pan and flatten them to form patties. You can also do a few at a time if you don't have a large enough skillet. Cook each patty until golden brown on each side. Place the finished ones on a baking pan in the oven to keep warm until you're ready to serve them.
