5 Salads That Leave You Full...Not Famished

One of the tastiest ways to get more veggies on your plate is by eating salads. Not the lettuce, slice of tomato, slice of cucumber and crouton salad…more like best of Pinterest salads.

To make it worth my time for all the chopping involved, I have started making more unique salads featuring beans, grains, and nuts. They happen to be so filling, they often end up taking up ½ of my plate. Not too shabby, considering that veggies are a free for all when it comes to blood sugar control. So the more vegetables I fit on my plate, the better.

The Recipes:

  1. Tomato and Chickpea Salad – Try this tasty Mediterranean treat featuring garbanzos, tomatoes, and herbs. You can even add carrots and cucumbers for more vegetable options.
  2. Cabbage, Cauliflower and Walnut Salad – Cabbage, celery, shaved cauliflower and crunchy walnuts make the perfect chopped salad.
  3. Whole Wheat Vegetable Pasta Salad – This cold pasta dish is best to bring-along for lunches, picnics, or long car rides.
  4. Avocado Black Bean Salad – This avocado, corn, black bean, and tomato salad is the embodiment of Southwestern flair.
  5. Pomegranate, Kale and Wild Rice Salad – Pomegranate, kale and wild rice? Might as well call this the Full Plate Superfood Fanatic salad!

To most people salads are synonymous with wilted iceberg lettuce - tasteless and boring. Which is unfortunate, because it makes it less likely that anyone would want to try this simple way of adding veggies to your plate. This week I’d like to invite you to bust the tasteless salad myth with me. All you need is a computer and your little fingers. My favorite part? You don’t even have to be a “cook” to throw together a great salad. For the most part, no cooking is involved.
