Zucchini and Bean Tacos

Make it a Full Plate Meal: Enjoy two tacos with pico and avocado slices. A fresh peach would end the meal quite nicely.

Zucchini Chickpea Stew

Make it a Full Plate Meal: Serve your stew atop a baked red potato for a 100% meal. Or serve with your favorite grilled item—chicken, fish, or tofu—for a 75% plate meal.

Zucchini Enchilada Bowls

Make it a Full Plate Meal: Top two zucchini boats with avocado slices and serve with a salad and fresh fruit.

75% water-fiber foods –zucchini, black beans, quinoa, onion, garlic, corn, avocado
25% foods – enchilada sauce, cheese, sour cream

Recipe Note: Skip the sour cream and use a sprinkle of cheese on top to keep 25% items in their zone.

Zucchini Patties

Make it a Full Plate Meal: Top two zucchini patties with tzatziki sauce and serve with your favorite summertime fruit for a fun breakfast.
