This Power Up meal is easier than easy peasy. If you can open a can, you can do this. And these are foods you know. Just pile on the veggies to add more flavor and crunch. Take a look!

Traditional Meal: 703 calories and only 8 grams of fiber.

This typical Southwest Salad has:

  • 3 cups Spring mix lettuce
  • 1/2 cup Shredded cheese
  • 1/4 cup Salsa
  • Gardein Chick'n strips
  • 1/3 cup Corn
  • 3 T Ranch dressing

This typical plate total is 703 calories and 8g of fiber. Not to mention those 47g of fat, which comes from the cheese and Ranch dressing.

Powered Up Meal: 462 calories and 17 grams of fiber!

If you're willing to substitute the Ranch dressing for the Guacamole, you get a creaminess with less calories and it's a healthy fat for you with 3g of fiber! Here's a picture and list of the items I picked up at the grocery store to create this meal.
